This is a Fossa. The San Diego Zoo Safari Park has these things called 'Animal Encounters' and if you're at the encounter spot at the right time, you get to see and learn about an animal. Let's see if I remember everything... The Fossa is the largest carnivore from Madagascar, and this particular one (I'm blanking on the name, but it was something like Babel...) is blind. He was raised by hand after being born at the San Diego Zoo. They are excellent climbers and you would never have know he was blind. Also, the kids were about two feet away from him!

San Diego Zoo Safari Park Take Two
Ok, so I got a membership to the San Diego Zoo Safari Park. Know what that means? Until Thomas comes home, I'll be posting blogs about it to show him the pictures of the kids when we go. Sorry. But the good news is that we will probably be doing something different each time, so at least you'll learn something new with each blog. :)

Balboa Park
Today Genny had an appointment at Urology down in San Diego. We had planned on getting together with Tonya and Skyla, but they are sick, so they had to cancel. I decided that it had been too long since we had been to Balboa Park, so after the appointment we went. Glenn enjoyed eating his lunch [veggie sticks and melba snacks] and Genny loved playing with most of the different things at the park. Her first love was a statue of an elephant (surprise, surprise since we've been to see the elephants twice now) and as I was nursing baby Glenn before we left, she had a blast walking on the long cement benches under the shade of the trees.

How Cute is Your Son?
Oh Glenn. With your littler rocker outfit and your skull and crossbones leggings. How is it that you don't taste as sweet as you look? Because when I was chewing on your cheeks earlier, all I tasted was lotion.



And then there's Genny, reading her Street Safety book to Ozzy, the boxer. How sweet and informative!
Chicken and Veggies Bake
Oh the possibilites! I originally found this recipe when my mouth started watering watching a Jon and Kate Plus Eight episode. Kate was gone, and left Jon with a few dishes of this chicken and veggies dish that he threw in the oven. I started my investigation and came up with a Rosemary and Chicken veggies bake. I've since tweaked it to my liking, and now will share it with you.
Ingredients:
Chicken (cut into tenders or cubes)
Fresh Veggies
Rosemary, Italian Seasoning, Lemon Pepper or any marinade you like
Salt and Pepper (if just using Rosemary)
Bag of small redskin potatoes
Preheat oven to 350. Put Chicken in 1/2 the marinade and set aside.
Cut up veggies.
PAM a 9X13 pan and add veggies.
Add the other half of the marinade. Mix up the veggies.
Put in oven for about an hour.
With 25 minutes left, put in the chicken. Mix in.
There you go! A tasty veggie-filled dinner that is (in my opinion) super easy to make. Last night I used these veggies: asparagus, carrots, broccoli, mushrooms, and spinach (don't add spinach until the last five minutes of cooking)
I didn't end up making the chicken because Kate came over with some.
This is pre-bake. I [of course] forgot to take a picture after it was done. But let me tell you, it was YUMMY!

This is what happens when you have a two and a half year old running around the house. (so sweet!)

Yes, that's a box of wipes in a play-size pack and play... ??
